Colombian Green Tomato Salad
Deb Puchalla over at Dinner Tonight from the editors of Martha Stewart’s Everyday Foods, is doing their Garden Goodies: Tomato Fest, in association with A Way to Garden. I am totally psyched that she included my Caprice Salad recipe in her post, but I also decided to add this tomato-y goodness.
Our au pair this year is from Colombia and sometimes she likes to make recipes from home. Our problem is that all of her measurements are not only in metrics, but in Colombian metrics, which are apparently different from regular metrics.
This usually results in a bunch of, “you want 6 pounds of steak?” “Yes.” “No, I think you must have converted wrong.” “Are you sure?” “Well 6 pounds is about this much.” <showing with hands> “No that is too much.” “Maybe 6 ounces?” “How much is that?” “About this much.” <showing with hands.> “No, I’m going to have to start over.” We get there eventually, but the recipes are a bit approximate, which is actually perfect for my whole shitarayn philosophy of cooking anyway.
This recipe is so good, it is almost like a pickle or a salsa but not. It really has its own super fresh summery taste. So here is Vicky’s Mom’s (sort of) recipe for Colombian Green Tomato Salad
2 medium green tomatoes, quartered and then sliced about 1/8 inch thick.
4 medium red tomatoes, seeded, halved and then sliced about 1/8 inch thick
Juice of 2 limes
1/2 bunch of scallions, sliced
1/2 cup of chopped fresh parsley
1/4 cup of chopped fresh cilantro
Salt liberally to taste
Mix together and let sit at least 1 hour (in refrigerator is okay) before serving
